Oat Muffins

  1. Pre-heat oven to 350°F
  2. Add 1.5 cups of oats and 1 tbsp baking powder to a food processor and blend into a flour.
  3. In a large bowl, mash the bananas into a smooth paste.
  4. Add the maple syrup, milk, and eggs into the bowl with the banana paste and mix vigorously with a fork.
  5. Add the flour to the wet mixture and mix with fork until combined.
  6. Add the 1 cup of oats you didn’t blend into flour and mix until combined.
  7. Let it sit for a few minutes, and pour into a greased muffin pan.
  8. Bake at 350°F for 25 minutes.
