Ingredients
- 2.5 cups oats
- 2 ripe bananas
- 1/4 cup maple syrup
- 1 cup milk
- 2 eggs
- 1 tbsp baking powder
Instructions
- Pre-heat oven to 350°F
- Add 1.5 cups of oats and 1 tbsp baking powder to a food processor and blend into a flour.
- In a large bowl, mash the bananas into a smooth paste.
- Add the maple syrup, milk, and eggs into the bowl with the banana paste and
mix vigorously with a fork.
- Add the flour to the wet mixture and mix with fork until combined.
- Add the 1 cup of oats you didn’t blend into flour and mix until combined.
- Let it sit for a few minutes, and pour into a greased muffin pan.
- Bake at 350°F for 25 minutes.
